No-Bake Chocolate Oatmeal Raisin Cookie Bites

The title of this gets better with every word amiright?! These are so scrumptious and even better for you.
 
One of the BEST parts of this recipe is there is no baking required. Just mix and chill. So let's get started!

Ingredients
1 1/2 cups dry rolled oats
1/2 cup all natural peanut butter or almond butter
2 scoops / packets of Chocolate Shakeology*
1/3 cup unsweetened vanilla almond milk
2 Tbsp. pure maple syrup
1 tsp. almond extract
1/2 cup raisins
 
Want to make into a Lactation Cookie Bite?
Just add 1/3 cup ground flax seed, 1/4 cup chia seeds, 1/4 cup brewer's yeast. Your formed dough balls will be a little larger than the 1" in directions. Add this into step 2.
 
Steps
  1. Line a large baking sheet with parchment paper and set aside.
  2. Add oats, peanut butter, Shakeology, almond milk, maple syrup and almond extract to a large mixing bowl. Stir until you reach a cookie dough consistency.
  3. Add raisins by gently folding into the dough until equally distributed.
  4. Form dough into 24 (1") balls, placing on parchment paper as go.
  5. Flatten them all into a cookie shape.
  6. Refrigerate in an air-tight container for up to 4 days OR store in the freezer for up to 2 weeks.
 
* Using Shakeology has a ton of health benefits (from pre/probiotics, daily vitamins and minerals and even supergreens! but if you do not have but still want the chocolate flavor, substitute the Shakeology with another flavor like vanilla (or none at all) and then use 2 Tbsp cocoa powder.
