Buddy the Elf’s Banana-Blueberry Mini Muffins: A Sweet Holiday Treat!

These sweet and wholesome mini muffins are perfect for the little elves in your life! Packed with bananas, blueberries, and a touch of cinnamon, they’re a holiday hit that’s easy to whip up.

Ingredients

2 cups almond flour

1/2 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

2 large overripe bananas, mashed (about 2/3 cup)

2 eggs, beaten

1/4 cup unsweetened applesauce

1 tsp vanilla extract

 2 tbsp brown sugar 

1 cup wild frozen blueberries (or regular blueberries)

Instructions

1. Preheat the Oven

Set your oven to 350°F (175°C) and grease or line a mini muffin tin with 24 cups.

2. Mix Dry Ingredients

In a large bowl, whisk together almond flour, cinnamon, baking soda, and salt. 

3. Mix Wet Ingredients

In a separate bowl, combine mashed bananas, beaten eggs, applesauce, and vanilla extract until smooth.

4. Combine

pGradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the blueberries.

5. Fill the Muffin Tin

Divide the batter evenly among the 24 mini muffin cups, slightly heaping over the top of each cup.

6. Bake

Place the muffins in the oven and bake for 20-23 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool completely in the tin before removing them.

Elf Tip: Serve these muffins with a drizzle of maple syrup or a dusting of powdered sugar for a festive touch. They’re Buddy-approved and perfect for spreading holiday cheer!
